Using a blast chiller is the fastest way to cool or freeze food quickly and safely. The rapid cooling technique used by a commercial blast freezer minimises the growth of bacteria by limiting the time food spends in the 'danger zone' - between 8°C and 63°C. A blast chiller cools cooked food from 70°C to 3°C in less than 90 minutes, while a blast freezer will cool it from 70°C to -18°C in less than 240 minutes.
